How about tasting spring time in your kitchen? First of all Gather some clean wild garlic, from your local woodlands. Take it home and rinse it. The other ingredients are here:-
120g/4oz wild garlic leaves, blanch the firstly blanch boiling water for 30 seconds then cool and squeeze
1 garlic clove, peeled and grated
20g pine nuts, toasted
200ml olive oil
½ lemon, zest only
30g parmesan cheese, grated
Put everything into a blender and whizz. Store in an air tight container.
We like ours with mashed potato.
